Cinnamyl propionate has a spicy, fruital odor with a woody, balsamic undernote and a sweet, warm, powerful, spicy
taste.

By direct esterification of cinnamic alcohol with propionic acid under azeotropic conditions, or with propionic anhydride (Arctander, 1969).
Taste characteristics at 10 ppm: sweet, floral, waxy, balsamic, green, punch, grape and cherry.
