Butyl Butyryllactate is a synthetic flavoring agent that is a stable,
colorless to light yellow liquid with the odor of cooked butter. it is
miscible with alcohol and most fixed oils, soluble in propylene glycol,
and insoluble in glycerin and water. it should be stored in glass, tin,
or resin-lined containers. it is used in butter flavors with applica-
tions in baked goods and candy at 14–60 ppm.
Aroma characteristics at around 1.0%: creamy, fatty, dairy-like, stale milky with waxy coconut-like nuances.
Taste characteristics at 5 ppm: creamy mouthfeel, buttery dairy, waxy, milky with coconut and cheesy nuances.
