Gardenia blue is rarely used directly for coloring food. It's primarily used in combination with natural yellow pigments such as gardenia yellow and safflower yellow to create various shades of green. Compared to extracted chlorophyll, green pigments formulated with gardenia blue offer more controllable hues and better acid resistance, making them suitable for acidic foods and beverages. Furthermore, gardenia blue can be combined with various natural red pigments to create different shades of purple. Therefore, gardenia blue has a wide range of applications in food processing.
