Chemical Properties
Colorless liquid. Insoluble
in water; soluble in alcohol and ether. Combustible.
Uses
2-Undecanol is a useful chemical reagent. It is reported that 2-Undecanol can be converted into aldehyde or ketone under mild conditions in the presence of a copper-based catalyst.
Uses
Antifoaming agent, intermediate, perfume fixatives,
plasticizer.
Definition
ChEBI: Undecan-2-ol is a fatty alcohol that is undecane carrying a single hydroxy substituent at position 2. It has a role as a plant metabolite. It derives from a hydride of an undecane.
Application
2-Undecanol finds limited use in flavour compositions, often in imitation Coconut, sometimes traces in Rum or Brandy flavours. Its taste is more pleasant than its odour, the fatty notes apparently subdued, and the fruity, nutty, sweeter notes enhanced at concentrations around 10 ppm.
Production Methods
2-Undecanol is produced 1) by hydrogenation of Methyl nonyl ketone. 2) from Decanoic acid and Acetic acid by heating their vapours over Thorium oxide at about 450 ℃. The resulting ketone is subsequently hydrogenated to the alcohol.
