Uses
(E)-2-Hexenyl valerate gives power and richness to the conventional esters used in such flavors, and it lends the much desired creamy-buttery note to Rum flavor, although it is by no means a key ingredient.
Preparation
trans-2-Hexenyl valerate is produced by direct estcrification of trans-2- Hexenol with (iso-)Valeric acid, preferably under azeotropic conditions.
