(E)-2-Hexenyl hexanoate has a fruity green odor. It is reported to possess a characteristic fragrance and green note of
jasmine.
Occurrence
Reportedly found in kumquat peel oil, guava, strawberries, plumcot, starfruit, nectarine, jasmine (flowers), tea
and Passiflora edulis (Hybrid) juice.
Uses
Trans-2-Hexenyl hexanoate is suggested for use in flavor compositions, mainly imitation Apple, Pear. Pine-apple, etc. but also in the popular "Tutti- frutti" types, where its radiance and power produces highly desimble effects. It can also be used in perfume compositiotts, although for this purpose, it is perhaps less suitable than the cis-3-isomer.
