Calcium Bromate is a dough conditioner and maturing and bleaching
agent which exists as a white crystalline powder. it is very soluble in
water and is used in flour and dough.
Calcium bromate is used as a maturing agent and
dough conditioner in bromated flours.Other than this usage, this salt is not utilized in
Industry. It is available commercially.
Calcium Bromate may be prepared by reacting
calcium hydroxide with sodium bromate or by reacting
calcium sulfate with barium bromate:
Ca(OH)2+ 2NaBrO3→Ca(BrO3)2+ 2NaOH
CaSO4 (aq)+ Ba(BrO3)2 (solid)→Ca(BrO3)2 (aq)+ BaSO4 (solid)
Of the two methods, the latter seems to be more
stable one since the temperature can be as high as 80°C in solution. The usual product is a monohydrate,
Ca(BrO3)2·H2O.
Calcium bromate monohydrate occurs as colorless,
monoclinic crystals or prismatic plates which are soluble
in water. This salt loses its water below 180°C and
decomposes above that temperature to form calcium
bromide plus oxygen.
