White or colorless crystals. M.P. 34° C. This material is practically odorless, but impafis a bread-like flavor when incorporated
in a flavor composition.
The ester was identified in bread more than
10 years ago (1955/56). It is interesting to note
that Benzene derivatives are components of
such common food as bread, when earlier it
was generally believed that Benzol derivatives
were rarely found in Nature (or in food).

Benzilic acid, e. g. under azeotropic conditions.
