It can break down high-molecular-weight, viscous glucans into low-viscosity isomaltose and isomaltotriose. It also hydrolyzes the 1,3-β- and 1,4-β-glycosidic bonds in β-D-glucans into oligosaccharides and glucose. The optimal pH for activity is 6.0-6.5 for bacterial production and 4.0-4.5 for fungal production. It is generally stable at pH 6-9. If kept at pH 8.0 and 35°C for 3 hours, its activity remains essentially unchanged. However, it decreases by approximately 20% at 45°C and by 70% at 50°C. It is extremely stable in the presence of calcium ions in aqueous solution, and its heat resistance is also enhanced. Glycerol helps prevent a decrease in activity, and is most effective at a concentration of 40%-60%. Surfactants can reduce its activity. The product is an off-white amorphous powder or liquid, which may contain a carrier or diluent. It is soluble in water and essentially insoluble in ethanol, chloroform, and ether.

Dextranase can be used in preparation of dextran for clinical use.

An endodextranase that hydrolyzes -(1,6)-glucosidic linkages in dextran. Dextrans are undesirable compounds synthesized from sucrose by microbial contaminants during sugar production that increase viscosity of the flow and decrease industrial recovery. Dextranase has been used for hydrolyzing dextran at sugar mills in order to improve efficiency of sugar production.
