Chemical Properties
Slightly lustrous white crystalline powder. Melting point approximately 116°C. Essentially stable in the dry state, it readily oxidizes when hygroscopic, reducing its effectiveness as vitamin C. Insoluble in water, but soluble in peanut oil (0.09%) and cottonseed oil (0.05%).
Uses
L-ASCORBYL 6-STEARATE is used as nutritional supplement and antioxidant. It is a lipophilic substance with vitamin C efficacy. In food, it can fortify vitamin C and prevent oxidation. It can be used in oils and fat-containing foods, such as butter, cheese, milk powder, condensed milk, margarine, animal and vegetable oils, ham, sausages, chocolate, chewing gum, hard candy, etc.
