Can be dispersed in petroleum ether, mineral oil, vegetable oil, difficult to dissolve in toluene,ether and ethyl acetate.Insoluble in water, methanol and ethanol.Melting point 47 to 50 ℃.With emulsification, stability, defoaming and other properties, and belongs to W/O type emulsifier.

Aerating agent, volume and texture improvement and anti-staling in cakes; Bloom retardant and flow modifier in chocolate; Emulsifier in coffee whiteners, dressings and sauces; Improves Overrun and Dryness in frozen desserts and ice cream; Improves stability and texture in icings and fillings; Emulsifier and improves extrudability in pet foods; Improves overrun and texture in whipped toppings.
