Phenylacetaldehyde dimethyl acetal has a strong, green odor with a hyacinth-like note. At low levels, it has a sweet,
green, spicy flavor, turning bitter at high levels.
PHENYLACETALDEHYDE DIMETHYL ACETAL is a colorless liquid with
a strong, rose-petal odor.The dimethyl acetal is more stable than phenylacetaldehyde
itself. It imparts a herbal green note to many flower compositions.
Reported found in cocoa and Bulgarian tobacco
By the cold reaction of the corresponding aldehyde with methanol or with orthoformic ester in the presence of acid.
