순도시험
(1) 비중 : 이 품목의 비중은 0.963~0.968이어야 한다.
(2) 굴절률 : 이 품목의 굴절률 은 1.554~1.559이어야 한다.
(3) 용상 : 이 품목 1mL를 80% 에탄올 4.5mL에 녹일 때, 그 액은 징명하여야 한다.
(4) 산가 : 이 품목의 산가는 향료시험법 중 산가측정법에 따라 시험할 때, 5 이하이어야 한다.

확인시험
(1) 이 품목 1방울에 물 1mL를 가하여 잘 흔들어 섞고 니트로프루시드나트륨시액 2방울을 넣은 후 수산화나트륨용액(3→10) 2방울을 넣어 흔들어 섞으면 담황색을 나타낸다. 다시 초산 5방울을 넣으면 액의 색은 엷어진다.
(2) 이 품목 5mL를 에탄올 20mL에 녹인 액에 염산히드록실아민 1.7g 및 수산화나트륨 1.3g을 물 5mL에 녹인 액을 넣어 잘 흔들어 섞어 약 90분간 방치하면 백색의 결정이 생긴다. 이 결정을 취해 에탄올을 용매로 하여 재결정할 때, 그 융점은 약 75℃이다.

정량법
이 품목 약 1.5g을 정밀히 달아 향료시험법 중 알데히드류 및 케톤류 함량측정법의 히드록실아민법 중 제2법에 따라 시험한다.
다만, 가열시간은 30분간으로 한다.

Amylcinnamic aldehyde is an oxidation product of
amylcinnamic alcohol, one component of the "fragrance
mix" and can be found as a sensitizer in cases
of contact dermatitis in bakers.

화학적 성질
alpha-Amylcinnamaldehyde has been identified
as an aroma volatile of black tea. It is a light yellow liquid with a floral, slightly
fatty odor, which becomes reminiscent of jasmine when diluted.The aldehyde is
relatively unstable and must be stabilized by antioxidants.
It is prepared from benzaldehyde and heptanal in the same way as cinnamaldehyde.
??-Amylcinnamaldehyde is a very popular fragrance substance for creating jasmine
notes. It is stable to alkali and long-lasting; large quantities are used, particularly
in soap perfumes.

By condensation of n-amyl aldehyde with cinnamic aldehyde. This method of condensation of aromatic aldehydes with
aliphatic aldehydes has the maximum yield in α-amylcinnamic aldehyde with little formation of the inferior homologs. The methyl,
ethyl and propyl amylcinnamic aldehyde analogs exhibit a characteristic scent.

So far as is known, all aromatic aldehydes are metabolized in the animal body by oxidation to the corresponding acids. In some instances, the aldehydes are excreted as glucuronides. Cinnamic aldehyde is oxidized to cinnamic acid which is then degraded to benzoic acid, but ethyl cinnamic aldehyde is oxidized to the corresponding acid and is not further metabolized(Williams, 1959).
