Synthesis
The target compound 2,5-dimethylthiazole was prepared by methylation reaction under alkaline conditions using 2-methylthiazole and iodomethane as starting materials [1]. The synthetic reaction formula is shown in the figure below:
Occurrence
Reportedly present in several foods including meat, coffee, tea (black), cocoa and barley (roasted). Also formed
in D-glucose/L-cysteine Maillard system upon microwave irradiation or conventional heating.
