Description
Glycerol Monostearate, commonly known as GMS, has the appearance of a white, odourless, flaky powder with a sweet taste in the mouth and is hygroscopic. It is a glycerol ester of stearic acid. It occurs naturally in the body as a by-product of lipolysis and is also found in fatty foods.GMS is a food additive used as a thickener, emulsifier, anti-caking and preservative; an emulsifier for oils, waxes and solvents; a protective coating for hygroscopic powders; a curing agent in pharmaceuticals and as a control release agent and resin lubricant. It is also used in cosmetics and hair care products.
Uses
Glycerol Monostearate is mainly used in bakery preparations as an emulsifier. It helps the fat and water to stay together and can prevent the formation of fat on confectionery and truffles. It is suitable for all water contents and is especially recommended for water-fat mixtures. It prevents ice cream from becoming dry or too sweet.
