L-arabinose Application:
Baked food: The molecular structure of L-arabinose contains an aldehyde group, a reducing monosaccharide. When mixed with sucrose in baked goods, it undergoes the Maillard browning reaction with amino acids, proteins, and other dough substances, imparting a unique flavor and brighter colors to baked goods. It also inhibits the body’s absorption of sucrose.
Drinks: Added to low-sugar beverages, sugar-free beverages, tea beverages, milk-containing beverages, vegetable protein beverages, fruit, and vegetable juice beverages, as well as other nutritional and health functional beverages.
Biomedicine: L-arabinose serves in synthesizing antiviral drugs such as nucleoside analogs. It is used as a raw material to synthesize 2-deoxy-2-fluoro-5-methyl-β-L-arabinose furanosouridine (L-FMAU), a potent anti-hepatitis B virus (HBV) and anti-Epstein-Barr virus active agent.
Other fields: L-arabinose, as a raw material, can produce the rare sugar alcohol-arabinitol through hydrogenation synthesis reaction, which is utilized in microbial fermentation and genetic improvement experiments. It is used to synthesize L-ribose, an important pharmaceutical intermediate for anti-AIDS virus and anti-cancer drugs. Additionally, it is employed in preparing arabinose-responsive essence, which produces soft and strong aroma.
