Hesperidin (glycoside) is a type of flavonoid substance with a dihydroflavonol structure and weak acidity. The pure product is a white needle shaped crystal, which is the main component of vitamin P. After hydrogenation, hesperidin becomes a natural sweetener dihydrochalcone, with a sweetness 1000 times that of sucrose, and can be used as a functional food. Hesperidin has various biological characteristics. Modern research has found that hesperidin can resist oxidation, prevent cancer, mold, allergies, lower blood pressure, inhibit oral and esophageal cancer, maintain osmotic pressure, enhance capillary toughness, and lower cholesterol. Research has shown that hesperidin has a broad-spectrum antibacterial effect on common food contaminating bacteria, and has significant inhibitory effects on Bacillus subtilis, Salmonella typhimurium, Shigella flexneri, Streptococcus pyogenes, and Vibrio cholerae. Therefore, it is widely used in food additives and food processing.
