Arabinose, also known as gum aldose or pectinose, is a pentoaldose: a monosaccharide with five carbon atoms and an aldehyde group. Molecular formula C5H10O5, molecular weight 150.131. There are eight stereoisomers of arabinose, the most common being β-L-arabinose (CAS: 87-72-9, specific rotation: +190.5°→+104.5°) and β-D-arabinose (CAS: 10323-20-3, specific rotation: -175°→-108°). Natural L-arabinose is widely found in food, usually in combination with other monosaccharides, in the form of heteropolysaccharides in colloid, hemicellulose, pectinic acid, bacterial polysaccharides, and some glycosides. D-arabinose is usually synthesized artificially and is rare in nature, but is occasionally found in the cells of certain E. coli or tuberculosis bacteria.
