Dipotassium hydrogen phosphate, also known as dipotassium phosphate, chemical formula K2HPO4·3H2O, molecular weight 28.22. The appearance is colorless flake or acicular crystal or white particle. It is deliquescent, easily dissolved in water (1g is about soluble in 3mL water), the aqueous solution is weakly alkaline, the pH of 1% aqueous solution is about 9, and it is insoluble in ethanol. Density 2.33g/cm3. After burning, potassium pyrophosphate K4P2O7 is formed. It is used as analytical reagent, pharmaceutical raw material, buffer, chelating agent, yeast food, emulsifying salt and antioxidant synergist in food industry. China's "Health standard for the use of Food additives" (GB2760-1996) stipulates that it can be used for plant fat powder, the maximum dosage is 19.9g/kg. When phosphoric acid is reacted with potassium carbonate solution and a small amount of KOH is added to the solution to make phenolphthalein a rose red color, it is prepared by evaporation and crystallization.
