In the sugar industry, Streptococcus mesenteriae and other microorganisms catalyse the conversion of sucrose into glucose by secreting glucoamylase, which further polymerises to form dextran. Dextran is a high molecular weight polysaccharide polymer with a predominantly alpha-1 and 6 glycosidic bond type.
The presence of dextran can have a serious impact on sugar production, significantly increasing the viscosity of sugar, reducing the filterability of sugar, causing crystallisation of sucrose with abnormal crystals and increasing the cost of sugar production while affecting the quality of the product.
The use of dextranase can effectively increase the heating rate of sugar cane juice, shorten the time for clarification and crystallisation and eliminate the negative effects of crystallisation, thus increasing productivity and sugar production.
