Tagalose is a naturally occurring six-carbon ketose found in yogurt, milk powder and cheese, but in smaller amounts. Tagose is a differential isomer of fructose, which is mainly made from galactose by isomerization, decolorization, desalting, concentration and crystallization in industrial production. In 2000, FDA approved tagose as a sweetener used in food, beverages and pharmaceutical preparations. In 2001, FAO/WHO Expert Committee on Food Additives approved Tagose as a food addition. The European Union also approved Tagose for listing in 2003. It was not officially approved for use in China until 2014.
