A kind of edible natural yellow pigment, which is prepared from the fruit of Gardenia in.sminoids L, the flowers of Cedrelatoona, the flowers of Verbascum officinale, the flowers of Crocus sativus, etc. Its yellow pigment is glucoside - anthocyanin, which belongs to the gentian ester of safflower acid (C20 H24O4) in the carotenoid system. α- The anthocyanin is hydrolyzed to safflower acid and glucose. The maximum absorption wavelength is 464.4nm. α- The anthocyanins are reddish brown needle like crystals. Slight odor. The melting point is 180 ℃. Easily soluble in hot water, becoming orange solution. Slightly soluble in anhydrous ethanol, ether and other organic solvents. Insoluble in grease. The aqueous solution is weak acidic or neutral, transparent and bright yellow, and the maximum absorption wavelength is 442nm. The hue is hardly affected by the pH value. Light resistance and heat resistance are better in neutral or alkaline conditions, and acid time difference. Good resistance to metal ions (except iron, it turns black when encountering iron). The dyeing property of protein is better than that of starch, and is not affected by pH value (pH4-10).
