Properties: 2, 3-pentanedione is yellow-green oily liquid. Sweet butter, cream, caramel aromas with a nutty base. It has a slightly sweet odor of quinone, diluted to a creamy odor. It is slightly soluble in water and soluble in organic fluxes such as ethanol. Easy dimerization, can occur oxidation, reduction, addition, condensation reaction. It can be decomposed by potassium permanganate and converted to α-hydroxy acid by interaction with sodium hydroxide.
Uses: 2, 3-pentanedione can be used as food flavor spices, gelatin hardener, photo binder and so on. China GB2760-86 provisions for the permitted use of edible spices. Mainly used to prepare chocolate and cream flavor. Its natural existence: it exists in coffee, beer, rum, whiskey, red wine, white wine. Found in the essential oil of Finnish pine.

Production method: Methyl acetone is oxidized with excess sodium nitrite and dilute hydrochloric acid in the presence of hydroxylamine hydrochloride and under the protection of nitrogen.
