2-Heptenal, 2-ethyl-

2-ethyl-2-heptenal is a colorless mobile liquid. Almost insoluble in water.

2-ethyl-2-heptenal is used in flavor compositions, ahnost exclusively in Pineapple flavors as a trace component in amounts equivalent to 0.03 to 2 ppm in the finished consumer product.

2-ethyl-2-heptenal is produced by condensation of n-Valerie aldehyde with n-Butyric aldehyde.

Soluble in alcohol, miscible with oils, fairly soluble in propylene glycol.
