Near white to pale tan or brown or pink amorphous powder, granule or liquid. Soluble in water (granules are insoluble in water), insoluble in ethanol, chloroform and ether. The main enzyme of Isomerase, glucose is glucose (or xylose) isomerase. The optimum pH is 6 to 8. Manganese and potassium can improve heat resistance. The optimum temperature is 40 to 65°C (60°C).
Glucose isomerase can catalyze the isomerization of D-glucose to fructose and D-xylose to D-xylulose. It can be used to make high fructose syrup from glucose.
