Thyme extract is the flavoring extract prepared from oil of thyme or from thyme or both, and contains not less than two-tenths percent by volume of oil of thyme. Also see Thyme.

Four acetophenone glycosides were isolated from the butanol-soluble fraction of thyme extracts. Among them, two new compounds, 4-hydroxyacetophenone 4-O-[5-O-(3, 5-dimethoxy-4-hydroxybenzoyl)-β-D-apiofuranosyl]-(1→2)-β-Dglucopyranoside and 4-hydroxyacetophenone 4-O-[5-O-(4-hydroxybenzoyl)-β-D-apiofuranosyl]-(1→2)-β-D-glucopyranoside, were confirmed.*
