Phenylacetaldehyde-2,3-butylene glycol acetal has a sweet, floral, somewhat earthy fragrance and a fruity flavor.

2-Benzyl-4,5-dimethyl-1,3-dioxolan is used in flavor compositions, mainly in fruit complexes, but also in the rare “floral” flavor type as a fixative/blender. The concentration is normally as low as 1 to 4 ppm in the finished product.
