Glycinate sodium is the sodium salt of glycine. It is a white or slightly yellow, hygroscopic crystalline powder at room temperature. It is very soluble in water, and the solution is alkaline. Its molecular formula is C₂H₄NO₂Na, and its molecular weight is approximately 97.
Food-grade Glycinate sodium can be used as a pH adjuster, stabilizer, and amino acid fortifier in beverages, meat product preservation, and food packaging materials, added in accordance with GMP guidelines. In the daily chemical industry, it is used as a mild detergent and metal surface cleaner, quickly removing silver and copper rust stains in dilute solutions with pH ≈ 10 without corroding the substrate.
