Tyr-Tyr-Tyr  is a small molecule peptide composed of three Tyrs, and its bitter taste is due to its significant hydrophobicity. Narai Kanayama and Aso demonstrated that Tyr Tyr and Tyr-Tyr-Tyr  effectively inhibit rabbit pulmonary angiotensin-converting enzyme (ACE), with IC values of 34 μ M and 51 μ M, respectively. These two tyrosine peptides exhibit a mixture of competitive and non competitive inhibition.
