Polyvinylpyrrolidone, referred to as PVP, is a polymer of vinylpyrrolidone, which is divided into soluble PVP and insoluble PVPP (polyvinylpolypyrrolidone) due to its different degrees of polymerization. The relative molecular weight of soluble PVP is 8000~10000, which can be used as a precipitant to precipitate with polyphenols. Because PVP has a cumulative effect in the human body, the World Health Organization does not recommend the use of this substance. In recent years, the adoption of soluble PVP has been rare. The insoluble PVPP system began to be used in the beer industry in the early 60s, and its relative molecular mass is greater than 700,000, which is a polymer insoluble substance formed by further cross-linking and polymerization of PVP, which can be used as an adsorbent for polyphenol substances, and the effect is very good.
