Stevioside is the main strong sweet component contained in Stevia rebaudiana, also known as stevioside. It is a diterpene glycosome and belongs to tetracyclic diterpenes, which is at position C-4 α- A glucose is connected to the carboxyl group and a disaccharide is connected to the C-13 position. Stevioside is white or yellowish loose powder or crystal under normal conditions. It is stable at room temperature. Its sweetness is about 300 times that of sucrose. Its taste is similar to sucrose. It has pure sweetness and no odor. The residual taste lasts longer than sucrose, and the heat is only one third of sucrose. It is non alcoholysis, good thermal stability, low toxicity and wide application range. It is called the third natural sugar source after sucrose and beet sugar.

1. As sweetener, pharmaceutical excipient and flavoring agent
In Brazil and Paraguay, stevia has been used as a sweet drink by local residents since the 16th century. Stevioside is not only used in the food industry, but also used in the pharmaceutical industry as flavoring agent (correcting the different and strange taste of some drugs) and excipients (tablets, pills, capsules, etc.).

1. Sweetness and flavor properties

2. Heat resistance
Stevioside has good heat resistance, and its sweetness remains unchanged when heated below 95 ℃ for 2 hours; When the pH value is 2.5 ~ 3.5 and the concentration of stevioside is 0.05%, the residual rate of stevioside is about 90% when heated at 80 ° ~ 100 ℃ for 1 hour; When the pH value is between 3.0 ~ 4.0 and its concentration is 0.013%, the residual rate is about 90% when it is stored at room temperature for six months. When the 0.1% stevioside solution in glass container is exposed to sunlight for seven months, the residual rate is more than 90%.
3. Solubility of stevioside
Stevioside is soluble in water and ethanol, but insoluble in organic solvents such as benzene and ether. The higher the refining degree, the slower the dissolution rate in water. The solubility in water at room temperature is about 0.12%. Due to the adulteration of other sugars, sugar alcohols and other sweeteners, the solubility of commercial products is very different and easy to absorb moisture.
