Chinese name: glycerol monostearate
English name: Monostearin
CAS: 123-94-4
EINECS number: 204-664-4
Molecular formula: C21H42O4
MDL number: MFCD00036186
Molecular weight: 358.56
category
Organic raw materials: carboxylate and its derivatives
Appearance: White or yellowish waxy solid, pleasant odor, fatty taste. Soluble in hot organic solvents such as ether, benzene, acetone and mineral oil, insoluble in water. However, in the presence of a small amount of surfactant, it can be dispersed in hot water. Median lethal dose (mice, abdominal cavity)200mg/kg. The product is often a mixture of glycerin monostearate and glycerin monopalmitate. Monoglycerides are water-in-oil emulsifiers, which are emulsified by strong shock in hot water. Molecular distillation of single glyceride has higher purity, white color and better emulsification effect than crude glyceride. Its emulsification and fresh-keeping effect is twice higher than that of crude monoglyceride, and the amylose complex index for bread can be increased from 28 to 92. Melting point: 70 °C
