Maltitol is a sugar alcohol (a polyol) used as a sugar substitute. It has 75-90% of the sweetness of sucrose (table sugar) and nearly identical properties, except for browning. It is used to replace table sugar because it is half as caloric, does not promote tooth decay, and has a somewhat lesser effect on blood glucose. In chemical terms, maltitol is known as 4-O-α-glucopyranosyl-D-sorbitol. It is a new functional sweetener. Maltitol has special physiological functions and physical and chemical characteristics, and has special effects that other sweeteners can't substitute. It is widely used in many industries such as food process, health products , etc.

APPLICATION
1.Used for candy and chocolate production
Due to the good flavor and taste of maltitol, its good moisturizing and non crystalline properties, it can be used to manufacture various candies, including foamed cotton candy, hard candy, transparent soft candy, etc.
2.Application in fruit juice beverages
Maltositol has a certain viscosity and is difficult to ferment. Therefore, when manufacturing suspended fruit juice drinks or lactic acid drinks, adding maltitol instead of a portion of sugar can make the drink taste plump and smooth.
3.Application in Frozen Food
The use of maltitol in ice cream can make the product delicate, thick, sweet, and delicious, and extend its shelf life.
