It is most often used in commercial food production and is labeled "sugar-free" on product labels. Due to its ability to extend the shelf life of certain products, isomaltol has been widely used as a preservative. This compound has a more complex chemical composition than natural sugars. Its molecular formula is C12H24O11, which is two independent bonds of disaccharides with a crystal structure.
