Fumaric acid is an important organic chemical raw material, an intermediate of fine chemical products, and an important derivative of maleic anhydride. It is widely used in food, coatings, resins and plasticizers. In the food industry, fumaric acid is used as a sour agent, which can be used in refreshing drinks, Western wine, cold drinks, concentrated fruit juices, canned fruits, pickled vegetables, ice cream. It is an acidic substance used as a gas producing agent for solid drinks, with good bubble persistence and fine product organization. Application: Fumaric acid is a food acidity regulator, acidifying agent, antioxidant agent, salting promoter and edible spice that is allowed by China's GB2760-1996 regulations. (1) This product has a strong buffer effect to keep the aqueous solution at about pH3.0, and has an important role in antibacterial and anticorrosive. (2) This product has astringent taste, is one of the most acidic solid acids. Because of its low solubility in water, it is rarely used. However, its water absorption is low, which helps to extend the shelf life of powder products. (3) After this product becomes sodium fumarate, water solubility and flavor are better.
