Decanoic glyceride has good emulsification, oil solubility, extensibility and lubricity, high temperature resistance, viscosity almost unchanged after long cooking and frying, and is not easy to be oxidized.
1. Oil base for emulsification of essence to prepare milk edible essence with low viscosity and high stability, which can be configured with W/O or O/W type.
2. It is used as an emulsifier in dairy products, cold drinks, soymilk, solid drinks and liquid drinks. When combined with soybean phospholipid, the milk powder can be rapidly dissolved in cold water.
3. It is used in the gum based formula of gum mother sugar to improve its softness.
