Production method
Starch is used as raw material, first liquefied by monoamylase, and then saccharified by β-amylase. The purity can reach more than 97%. Generally, barley malt (containing amylase) is used to act on starch to obtain a mixture of dextrin and maltose (about one-third), called caramose.
