It is a kind of starch debranching enzyme, because it can specifically hydrolyze pullulan (a polymer linked by α - 1,6 glycoside bond of maltotriose) It is named amylase. It can specifically cut the α - 1,6 glycoside bond in the branching point of amylopectin, cut off the whole branching structure, and form amylose. It can be used together with glucoamylase to produce high glucose syrup and high maltose syrup from liquefied starch slurry. The enzyme is stable under high temperature and acidity,
