A mixture of monomeric and linear dimeric acetone peroxides (mainly 2,2-hydroxyperoxypropane), with minor proportions of higher polymers, usually mixed with an edible carrier such as cornstarch. The cornstarch mixture is a fine, white, freeflowing powder having a sharp acrid odor similar to that of hydrogen peroxide when the container is first opened. Acetone peroxides are used in foods as a bleaching agent, maturing agent and dough conditioner. Acetone peroxides are strong oxidizing agents and exposure to skin and eyes should be avoided.
