Chemical Properties
Soluble in cold water (unlike regular
starch) and has high thickening power. Can be
frozen and thawed repeatedly without change in
physical properties.
Uses
Thickener for frozen foods; taconite ore binder;
in adhesives, drugs, cosmetics; substitute for Arabic
gum, locust bean gum, and carboxymethyl cellulose.
Definition
An ester made from the reaction
of a mixture of orthophosphate salts (sodium
dihydrogen phosphate and disodium hydrogen
phosphate) with starch.
