Uses
2-Methyl-3-(2-furyl)propenal finds use in flavor compositions, not only in spicy types, but also in Nut compositions, Chocolate, fruit, etc. and occasionally in Maple-Walnut. The concentration used is about 0.5 to 1 ppm in the finished product.
Preparation
2-Methyl-3-(2-furyl)propenal is produced by condensation of Furfural and Propionaldehyde.
