N-NONYL CAPROATE

Colorless oily liquid. Sp.Gr. 0.89. B.P. 255℃. Insoluble in water, soluble in alcohol and oils.

Uses

N-nonyl caproate has found some use in flavor compositions in countries other than the USA (where it is not listed as G. R.A.S.) for imitation Apple, Orange or Nut, usually in concentrations equal to 2 to 15 ppm in the finished product.

Preparation

N-nonyl caproate is produced by azeotropic esterification of n-Nonanol with Hexanoic acid.
