Uses
Vital Wheat Gluten is a powder of high protein content obtained
by drying freshly washed gluten under controlled temperature con-
ditions. it absorbs approximately twice its weight of water and read-
ily forms a cohesive, elastic dough. it is used in bread, rolls, and
