Cellobionic acid is produced by ozonization of Cellobiose. Cellobionic acid was not a good substrate for β-Glucosidase. The lactonized carboxyl group inhibited the enzymic hydrolysis. This inhibitory effect of Cellobionic acid was removed by gluconolactonase.
