Calcium Citrate is the calcium salt of citric acid which functions
as a sequestrant, buffer, and firming agent. it is a white, odorless
powder which is slightly soluble in water. it is used as a firming
agent for peppers and lima beans and is used to improve the baking
properties of flour.

Calcium citrate is an intermediate in the process of industrial production of citric acid, which is separated from citric acid in fermentation works. Neutralization with calcium hydroxide during citric acid fermentation precipitates insoluble calcium citrate. It is filtered out of the liquid and cleaned to obtain pure calcium citrate.
