Uses
Ophthalmic Acid is used in the composition and method for enhancing cooling sensation of food and beverage, and flavor composition.
Definition
ChEBI: A L-glutamine derivative that is L-glutamine substituted by a 1-[(carboxymethyl)amino]-1-oxobutan-2-yl at the terminal amino nitrogen atom.
Biological Activity
Ophthamalic acid is an analogue of glutathione isolated from crystalline lens. Ophthalmic acid could be used as a biomarker in oxidative stress. Ophthalmic acid belongs to the class of organic compounds known as gamma-glutamyl peptides. These are oligo- and polypeptides consisting of any C-terminal alpha peptide having a gamma-glutamyl residue attached at the N alpha-position.
