Description
Linalyl hexanoate has a green, warm, fruity odor with an animal like undertone and a pineapple-pear flavor. May be prepared by
esterification of dehydrolinalool with n-hexanoic acid followed by
hydrogenation at the dehydro ester.

Uses
The ester FEMA 2643 is used occasionally in Lavender bases or as part of various fruity topnote compositions. As a flavor material, its use is somewhat restricted to Pineapple imitations and variations of “Tutti-frutti” complexes.
Preparation
By esterification of dehydrolinalool with n-hexanoic acid followed by hydrogenation at the dehydro ester.
