5-Hydroxy-4-octanone has a sweet, slightly pungent, buttery, nutlike odor and a sweet, buttery, oily taste. May be prepared by
reacting sodium metal with ethyl butyrate in boiling ether or in
the same fashion starting from methyl butyrate.
