Pineapple juice may be regarded as a byproduct resulting from the preparation of primary pineapple products such as slices, chunks, and crushed meat. Juice is primarily derived from cores, juice trimmings, eradicator meat, small fruit, juice drained from crushed pineapple, and juice drained from eradicator meat. The FDA Standard of Identity for pineapple juice is defined as the “juice intended for direct consumption, obtained by mechanical process, which may include centrifuging but not filtering, from the flesh or parts thereof, with or without core material, of sound, ripe pineapple. Canned pineapple juice contains finely divided insoluble solids, but it does not contain pieces of shell, seeds, or other coarse or hard substances.” Added sweeteners, vitamin C, and dimethylpolysiloxane (defoaming agent) may be added to canned pineapple juice.
